Ingredients
(4 Servings)
- 3 large chicken breasts (or thigh / plant based)
- 1 tbsp chilli powder
- 1 tbsp cumin
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp oregano
- Salt and pepper to taste
- 1 tin of 400g chopped tomatoes
- 300ml chicken stock
- 1 large white onion
- 1 large pepper
- 350g of uncooked, dried pasta of choice
Instructions
- Set pasta to boil separately
- Sear the chicken, then add in the onion and pepper, along with the chicken stock and spices
- Once the chicken is cooked through, add in the chopped tomatoes
- Bring to the boil, then gently simmer until the sauce has thickened
- Drain and add in the cooked pasta
- Now you can either serve, or top with cheese into an overproof dish for a pasta bake
