Chicken Fajita Pasta

Ingredients

(4 Servings)

  • 3 large chicken breasts (or thigh / plant based)
  • 1 tbsp chilli powder
  • 1 tbsp cumin
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp oregano
  • Salt and pepper to taste
  • 1 tin of 400g chopped tomatoes
  • 300ml chicken stock
  • 1 large white onion
  • 1 large pepper
  • 350g of uncooked, dried pasta of choice

Instructions

  1. Set pasta to boil separately
  2. Sear the chicken, then add in the onion and pepper, along with the chicken stock and spices
  3. Once the chicken is cooked through, add in the chopped tomatoes
  4. Bring to the boil, then gently simmer until the sauce has thickened
  5. Drain and add in the cooked pasta
  6. Now you can either serve, or top with cheese into an overproof dish for a pasta bake
